The former KFC in Hopkins’ downtown is no longer on track to become a Popeyes chicken restaurant. Speculation that the Hopkins KFC would become a Popeyes arose in October when the Star Tribune reported that AFC Enterprises, Popeyes' parent company, planned to buy 14 KFC properties in the Twin Cities from bankrupt franchisee Wagstaff Management. But a for-sale sign that appeared at the 1728 Mainstreet property suggested plans had changed. On Thursday, Wagstaff Management confirmed to Patch that the restaurant was not part of the AFC Enterprises deal. The fast-food chain could open in the shuttered KFC restaurant on Mainstreet.
The KFC restaurant on Mainstreet has been closed for months, but it could eventually be replaced with another fast-food chicken chain. The Star Tribune reported Friday that AFC Enterprises, Popeyes' parent company, wants to buy 14 Twin Cities KFC restaurants from a bankrupt franchisee. If a judge approves the agreement, AFC would spend $11.5 million to convert the former KFCs to Popeyes restaurants and quickly bring them into operation. The closed Hopkins restaurant is one of the 28 KFC locations affected—half of them in the Twin Cities.
