Five Guys, Bruegger's Another Step Closer to Coming to Hopkins

The City Council approved four pieces of the project Tuesday.

A planned retail center that will have a Five Guys Burgers and Fries, Bruegger’s Bagels, Sprint store and Fantastic Sams is closer to becoming a reality.

City Council members on Tuesday approved four measures necessary for the Knollwood Crossings project to move forward:

  • A preliminary final plat,
  • Rezoning of the old BP site at 525 Blake Road,
  • Site plan approval for the BP site and
  • The planned unit development overlay, which allows site-specific development that may deviate from the underlying zoning standards.

When it’s done, the project will have two buildings with about 12,000 square feet of retail space. There will be space for two more tenants in addition to those who’ve already committed.

The front of the shops will on the east side. There will be some “spandrel glass” on the Blake Road side. That type of glass is used to cover construction materials and, in this case, will make the Blake Road side look less like the back of a building in places where there’s not actual glass.

A sidewalk will connect pedestrians on Blake Road to the front of the building, and there will be bike racks.

The council will sign off on the final pieces of the project Nov. 7.

“It should turn out to be a great project in a much-needed area that we had to redo,” Mayor Gene Maxwell said.
